Health Hack: Vegan Egg Replacers

Health Hack: Vegan Egg Replacers

One of the most important tricks to vegan baking is learning proper substitutes for eggs, butter and milk. Replacing the milk is pretty easy, with so many non-dairy milks easily available today; and butter can be swapped for olive oil or vegan margarine, such as Earth Balance spread. But vegan egg replacers are where things get tricky, and there are so many options. Here are six to try. More »

Holiday Homemade: Pomegranate And Persimmon Vegan Fruitcake

Holiday Homemade: Pomegranate And Persimmon Vegan Fruitcake

Nobody likes a fruitcake, right? That’s a trope so old that I’ve never even been quite sure what a fruitcake actually is—just that it’s something nobody wants to get come the holiday season. But Wikipedia informs me that while fruitcake typically refers to a cake baked with dried or candied fruits and nuts, any cake with fruit as an ingredient “can also be colloquially called a fruitcake.” Which inspired me to try coming up with a healthy, vegan fruitcake, using the pomegranate and persimmon I had in my fridge. Holiday Homemade: Vegan Gingerbread Cookies

Holiday Homemade: Vegan Gingerbread Cookies

This healthy, spicy vegan gingerbread cookie recipe is a mis-mash of several others—Martha Stewart’s chewy chocolate gingerbread cookies, Post Punk Kitchen’s vegan gingerbread cut-outs—with a few of my own twists. I’m not a terribly patient or detail-oriented baker, so my cookies don’t look the best. But they were easy to make, and ended up being crowd-pleasers at a holiday party I had this past weekend—especially once I added a little (non-vegan) icing whipped up from cranberries, butterscotch chips and greek yogurt. Holiday Homemade: Vegan Cinnamon-Raisin Bread Pudding

Holiday Homemade: Vegan Cinnamon-Raisin Bread Pudding

Bread pudding is a traditional holiday desert—and one traditionally made with eggs, beef fat and lots of sugar. This vegan bread pudding remains true to the original with baked bread, raisins and lots of spices, but it’s absent any eggs, dairy or other animal products. Using unsweetened almond milk (only 40 calories per cup), a minimal amount of sugar and Ezekiel’s sprouted whole grain cinnamon raisin bread as the base keeps things low-calorie and cuts down on the number of individual ingredients needed (the bread already contains organic raisins and cinnamon). And once you mix the ingredients together, you’re only looking at 30 minutes baking time—making this a perfectly easy (and delicious) vegan holiday desert. More »

Baking While Vegan: Ginger Molasses Cookies

Baking While Vegan: Ginger Molasses Cookies

Looking for a holiday cookie recipe without all the eggs, butter, milk or excessive sugar? Look no further. These vegan ginger molasses cookies have been a holiday favorite of mine for a few years now. They’re not terribly sweet, but with such a strong spice flavor—ginger and cloves and cinnamon, oh my!—no one should mind. And gingerbread fans in particular will enjoy these cookies. More »

PETA’s Ultimate Vegan Baking “Cheat Sheet”

PETA's Ultimate Vegan Baking "Cheat Sheet"

We have mixed feelings about PETA’s advertising, but we are definitely into their new “ultimate vegan baking cheat sheet.” It makes it easy to adapt any non-vegan baked-good recipe into a vegan version, by offering specific instructions and measurements for vegan egg, milk, buttermilk, condensed milk (hello, pumpkin pie!) and butter replacers. Print this and stick it on your fridge if you’re vegan or serving vegan guests this holiday season, and you won’t have to hunt for all new recipes for your favorite pies and cakes. More »

Healthy Baking: 8 Festive St. Patrick’s Day Recipes

Healthy Baking: 8 Festive St. Patrick's Day Recipes

We’re all for four-leaf clovers and lucky charms, but when it comes to our health we’re not leaving it up to luck, even on St. Patrick’s Day. All those green treats that get passed around parties are tasty, but they’re typically full of sugar, fat, and leave us feeling a lot less festive once we’ve cleaned our plates. We searched for some healthier options and came up with eight recipes for cookies, cakes, soda bread, and even jello that will even make vegan, gluten-free guests feel luckier than an Irishman More »

Health Hack: Make Your Own (Vegan) McDonald’s Apple Pie

Health Hack: Make Your Own (Vegan) McDonald's Apple Pie

There’s nothing like homemade apple pie, unless, of course, it comes from McDonald’s. Their baked apple pies are adored by children and adults alike, but the ingredient list* is full of things we don’t recognize (and some that we do, but just plain don’t want to eat). Instead of denying ourselves all pleasure and nostalgia for the sake of better health, we decided to take McDonald’s apple pie into our own hands, giving the recipe a major overhaul so that you can make your own vegan baked apple pie without the guilt. Healthy Baking: Vegan, Gluten-Free Valentine’s Day Thumbprint Cookie Recipe

Healthy Baking: Vegan, Gluten-Free Valentine's Day Thumbprint Cookie Recipe

Remember those awesome Sugarplum Cookies we made for Christmas here at Blisstree? The festive cookie recipe from Babycakes’ Erin McKenna is not only vegan and gluten-free; it also contains heart-healthy flax meal and uses healthy butter and dairy alternatives like coconut oil and applesauce. I love them so much (and so do my non-vegan, non-gluten-intolerant friends) that I decided to play with the recipe to make a Valentine’s Day version, flavored with hazelnuts, lemon zest, strawberry jam and made festive with a heart-shaped thumbprint. These are better than any Valentine I ever got in school. More »
