Carnival of the Recipes

As I mentioned last week, I have the pleasure of hosting this week’s Carnival of the Recipes. This week’s theme is Mexican food. Yummy! My husband will be thrilled with the new recipes I will try. If you’re throwing a SuperBowl party, perhaps you might consider doing a Mexican theme.

Shawn at Everything and Nothing has a recipe for Mexican Chicken Stew. Perfect for a cold day and best of all, it looks easy to make!
Kelly, the co-author for Thrifty Mommy, has a Great Mexican Casserole Recipe. It was passed down to her from her grandmother.
My friend Revka at The Porch Light shares her recipe for Tex Mex Crock Stew/Steak Burritos. She also shares how families can have more time together by using the crock pot.
Kate at Babylune, another b5 blog, has submitted a recipe for Root Vegetable Casserole. This is an extremely healthy dish made of root vegetables that you can spice up with Mexican flavor. A few chilis on top or serve with a dollop of salsa to keep the Mexican taste alive.
Just in time for the Super Bowl, Michele at Meanderings has a Super Bowl Taco Dip.

Fitch at Wise Bread introduces us to Morningstar “fake meat”. He has a freezer full of it and gives us a recipe easy or awesome tacos. I may be dropping back by for some thrifty tips.
Keewee’s Corner gives us a recipe for authentic Chicken Mole that was given to her from her Mexican chef friend. Ummhmm!
The author of Right Wing Nation used to be a chef and he has given us lots of information. At his post you will find information about Mexican foods and many recipes as well!
Peggy has a six-layer dip. Looks like another good one for the Super Bowl. Yummy!
Kathy at Start Cooking has a guacamole recipe and some nice looking pictures. She also has some instructions on how to handle hot peppers.
Rhianna from Rhianna’s Recipes lives in Texas and she has many Mexican and Tex-Mex recipes on her site. This link will take you to her recipe for Chicken Enchiladas, but while you’re there you can search around for tamales, guacamole dip, tortillas, and more.
Lisa’s Cookbook has a Mexican Lasagna recipe. My husband doesn’t eat pasta, but I think he’d eat this lasagna.
World Famous Recipes has provided us with recipes for Mexican Beef Stir Fry and Slow Cooker Mexican Beef Stew.
Baboon Pirates has a recipe for Poultry Digits Doused in Mole Sauce, better known as Dedos de Pollo con Salsa Mole.
Disease Proof provides ways to prevent and reverse disease with nutrition. Joel has submitted a recipe for Mexican lentils.
Riannan has a recipe for Chilaquiles. She says one should think of them as the Mexican equivalent of a rustic pasta dish.
Lookin At Cookin has a recipe for Mole Negro de Oaxaca.
At Akukamann Recipes you’ll find a Diabetic recipe for Mexican Tuna Salad.
Trinity Prep School submitted a funny seasonal Mexican recipe using tortillas.

Adam at Men In Aprons has a recipe for Cocoa Candied Pecans. These may not be a Mexican recipe, but Adam has a great picture that makes my mouth water.
If you’re looking for something to go with your hot coffee today, try Morning Coffee & Afternoon Tea’s recipe for Cream Cheese Fruit Tarts.
Kneadle Work has submitted a recipe for New England Clam Chowder. This is a thickened clam chowder to add to the rotation of meals for Fridays in Lent. Sounds great on a cold winter day.
Stop the Ride! has a Cranberry Nut Bread recipe. Another great recipe for a cold winter day or perhaps for a Valentine gift for a close friend. Stop the Ride! is also a site about finances and frugality. Another site for me to stop by later.
Triticale – The Wheat/Rye Guy has given us a recipe for gooey chocolate chip cookies.
The Common room has submitted a recipe for Kale and Currants. This dish would work well as a vegetarian main dish or a side dish for meat lovers.
Wenchypoo’s Mental Wastebasket has some information on reading food labels.
RDoctor has an interview with Dr. La Puma. The interview is about using your diet as medicine.
