Cheesy Chicken Croissants

cheesy chicken croissantsI was looking through the recipe archives this week and couldn’t believe that I haven’t given you this recipe yet.  I am making this tonight and it is so yummy!  My kids even eat it.

  • 2 rolls of croissants (from the dairy case)
  • 2-3 cups cooked chicken, cut or torn into small size pieces
  • 2 cups shredded cheddar cheese
  • 1 can cream of chicken soup
  • 1/2 can milk
  • 1/2 can water
  • garlic, salt, pepper (optional)
  • How you choose to cook the chicken is up to you.  I would recommend boiling it or cooking it in a skillet with a little butter.

    Preheat oven to 375 degrees. In a bowl, mix the chicken, half of the cheese, and a dash of the spices together. Spray pan(s) with cooking spray. Unroll croissants and fill with chicken mixture. Then re-roll and lay in pan. In a sauce pan, heat soup, water and milk together until hot, then pour over croissants. Top with remaining cheese. Bake uncovered for 40 minutes.

    Some tips:

  • I like a little more sauce with mine. You can use the family size can if you want.
  • I use 2 rectangular casserole pans to make these.
  • You can cut down on the fat content by use low fat cream of chicken soup, reduced fat cheese, and reduced fat milk. I think they sell reduced fat croissants too.
  • I wait until the croissants are on sale before I make this dish. Sometimes the grocery stores will run these buy 1 get 1 free and then many times Pillsbury has coupons on the Sunday paper.

      Yay! Glad I was able to help out. We ate ours and it was so yummy! I only make it about 3-4 times a year. I was glad to see the croissants go on sale so that I could make it again.

      Ooo, yummy! These look great for the nights dad works late. I’m always looking for something quick, easy, and kid-friendly on those nights, and this will definitely make our menu.

      Amanda: Another good thing is that these are really good as leftovers. I like to use a little extra sauce because the croissants soak it up.

      Heidi: The broccoli sounds like a great idea. I’ll have to try that next time. I like sneaking veggies in on the kids.

      Hickory Chick: I don’t think it would get soggy. I put the leftovers in the fridge for the next day and I don’t have any problems. I’m getting ready to have some now. :)

      i just discovered a similar thing a few weeks ago: i had no bread in the house, was hungry, and had deli turkey and cheese. So i found a tin of croissants, and kept two sections together, so they were rectangle shaped, and rolled them up with the turkey and cheese and some mustard, and prepared as instructed. Yum! i can’t wait to try yours, though, as it sounds more like dinner than just lunch.

    10. I make this all the time, although my recipe called for mozzarella cheese, but I don’t use the cheese anyway. Matter of fact, I made this last night! =)

      I made these to take to my sister who just had a baby on Sunday. I put everything together last night, and when I got to her house we put them in the oven for 45 minutes. Between my sister, her husband, me and my husband, we ate all but 2!! The 2 girls shared one and ate mostly carrots & fruit, which I guess I shouldn’t complain about. Thanks so much… we all loved this and we’ll definitely make it again! I think this would be great for a church pot-luck!

      I’m glad you all enjoyed them! I had my leftovers for lunch for 2 days. They were yummy! I’ve never made these for church before, but I’m sure they would be a hit.

      I am making something like this right now.. But I don’t roll it up. This is what I do and seems to make alot more at once. I boil my chicken then break to little pieces put it in cream of chicken and cream of mushroom soups. While thats getting warm in the pan I lay my croissants out flat on a cookie sheet pour the chicken and soup on top of the laid out croissants add cheese any kind of your choice and lay croissants on top of that. bake for 40 mins cut and serve

      Could you make this ahead? I’m in a dinner swap group and I think they’d love this. Sounds like a meal the whole family will enjoy. :)

      • You can make it a little ahead of time, but it isn’t as good because the croissants soak up a lot of the cream of chicken. The leftovers that I heat up are good, just not as good as the original. Hope you enjoy it! :)
