Easy Fake Desserts

I recently discovered the website Real Simple.  Maybe you already knew about it and I’m naive.  Regardless, I really like this site. 

Last week when my daughter had to go to the doctor, I found a copy of their magazine in the waiting room.  I was pretty impressed with the magazine too.  It was one of those magazines I wanted to take home with me, read, and return.  I knew that would be dishonest, so I resisted temptation.  ;)

While I was reading, I found out that Real Simple has recipes for fake desserts.  They call these “Fake It, Don’t Make It Recipes”.  Here’s an example of one:

Easy Rice Pudding


2 cups instant rice (such as Minute Rice)
1/2 cup vanilla ice cream
1/2 teaspoon ground cinnamon, plus more for garnishing (optional)

Prepare the rice according to the package directions. Uncover, add the ice cream and cinnamon, and stir. Divide the pudding among individual bowls and top with additional cinnamon, if desired. Serve warm or at room temperature.

Yield: Makes 4 to 6 servings

easy rice puddingNow I wish I had picked up some vanilla ice cream at the grocery store this week while it was on sale.  I sure wish I had a subscription to the magazine.  Hint, hint.  LOL  :D
