My grandmother used to make a fabulous Mexican Casserole recipe that i have loved for years.  It’s fast and really tasty!  Hope you enjoy it.

1 bag Doritos Chips crushed

1 lb ground beef

2 cans Rotel diced tomatoes and chilies

2 cans cream of mushroom

3 cups shredded cheese

1 tbsp chili powder

1 tsp Mrs. Dash extra spicy season salt

Dash pepper

Season meat with chili powder, Mrs. Dash (for lower sodium intake), and pepper.

Brown meat and drain

Mix soups and set aside

Layer a casserole dish with chips, meat, soup, cheese, chips, meat, soups, and cheese.

Bake at 350 deg covered for 30 minutes or until cheese has melted.  Uncover and let cheese brown just a little.  Serve with Salad or your favorite veggies.
