It’s Cold and Rainy Outside

chiliIt’s cold and rainy outside today and I was in the mood for chili . . . but not just ordinary chili.  Some people call it chili pie and I think Sonic calls it Frito pie. 

So, here’s how it’s done . . . In a bowl put a layer of Frito corn chips (I like the chili flavored ones, but the plain are fine).  Next goes a helping of chili, shredded cheese, fresh diced tomatoes, and then it’s topped with sour cream. Yummy!

Have any of you ever had it before?  And you know, chili is pretty inexpensive to make.  I will say that the rising cost of the tomatoes broke the budget of the meal, but they were worth it. 

I make my own chili too.  It’s pretty simple. I cook 1 pound of ground beef and some diced onions, then drain the grease.  Next, in a pot I combine the beef and onion mixture, some Bush’s chili beans (about 4-5 small cans or 2 large), 1 can of tomato sauce, garlic, salt, 1 can of chopped canned tomatoes, McCormick chili seasoning (to taste), and some hot sauce if I think it’s not hot enough.  Simmer for about 45 minutes.

Pretty simple.  Frugal on time and money.  And it was a great meal for a cold and rainy day.

    The great thing about chili is that you can make a lot for a little bit of money. Last night I gave a quart to the volunteer babysitter at church. It was perfect b/c she hadn’t had dinner yet.

    And now I’m getting ready to have some leftover chili for supper. Yummy!
