My Favorite Slow Cook Recipes

Below are my favorite crock pot recipes.  Hope you enjoy them.  They are very simple to make and are great time savers!  You can throw these in the crockpot before you leave for work and come home to a hot meal.crockpot roast

Easy Crockpot Roast

2-3 lb roast
1 package Lipton onion soup mix or 1 can Campbell’s French Onion soup
1 can Campbell’s Cream of Mushroom soup
sliced onions, optional

Just put the roast in the crockpot.  Pour in onion soup mix, mushroom soup, and water (enough to cover the roast at least an inch or 2), and sliced onions (optional).  You can also add some sliced carrots or potatoes.  I usually prefer just the roast and then I make some mashed potatoes and a vegetable.  Adding sliced potatoes and carrots does make for an easy meal.  Cook the roast for about 8 hours, until the roast is tender.  I use the broth to pour over the mashed potatoes.  If you like a thicker gravy, you can add some cornstarch to the broth to thicken it up.  This recipe also works with beef tips.

I use this one a lot for church potlucks.  It feeds a lot of people and it is cheap to make. 

To make the pinto beans, I soak them in water for 6-8 hours.  Usually, I need the beans for church on Sunday morning.  I soak the beans on Saturday afternoon.  After the beans have soaked, I drain them, rinse them, and take out any beans that are black or bad quality.  Saturday night before bed, I put the beans in my crock pot, cover them with water (about 2 inches above the beans), add some salt and pepper, and I like to add a ham bone.  This is a thrifty seasoning.  I just save my ham bone or ham juice when I make ham and I freeze it for making beans later.  Turn the crock pot on high and just let it cook overnight.  The next day I take the crockpot to church, turn it on low, and let it simmer until the afternoon dinner.  Yummy!
