Remember the Perdue Perfect Portions that I raved about last week? Well, I am pleased to announce that I have in my possession free coupons for the Perdue chicken. Yay! I love free stuff! I am giving away some coupons for these fabulous Perdue chicken breasts.
Each coupon entitles the person to one package of Perdue Perfect Portions. The value of each coupon is $9.99.

I love the even cuts! It is so nice to not have to mess with packaging them for freezing or having to remove the fat. My fav recipe is to put them in a baking pan and pour bbq sauce over them and then just bake until done.

3 tblsp olive oil
i pkt garlic and herb soup mix (lipton)
mix in bowl
coat chicken with mix
grill or broil until no longer pink
so good

I love your blog! I have yet to post since I have a newborn, but I love your daily fun posts!
As for the Perdue, I love to make Chicken and Yellow Rice….I cut up the chicken and cook it on the stove with salt, pepper, and a little veg. oil. I make the yellow rice with the directions on the bag, and mix it all together when everything is done with a can of drained green peas. Yum! I guess it may be the Spanish version since I live in Tampa, FL.

My favorite quick chicken recipe is quick, easy and yummy. You could revamp it as healthy chicken tenders, or dress it up as Chicken Parmigiana with some sauce, cheese and noodles. I found it on recipezaar years ago, and it works great with the thin cut Purdue Perfect Portions:
Oven Fried Almond Chicken
1 cup fresh processed breadcrumbs (2 slices bread)
1/4 cup grated parmesan cheese
1/4 cup almonds finely chopped
2 tablespoons chopped fresh parsley
1 clove minced garlic
1/4 teaspoon dried thyme
1 teaspoon salt
1/4 teaspoon black pepper
1/4 cup olive oil
6 chicken breast halves pounded to 1/2 inch thickness
1. Preheat oven to 400°.
2. In flat pie plate, stir together bread crumbs, Parmesan cheese, almonds, parsley, garlic, thyme and salt and pepper.
3. Pour oil into another pie plate and dip chicken.
4. Place chicken in crumb mixture to coat, then place on cookie sheet that has been sprayed with non stick spray.
5. Bake for 20 minutes or until juices run clear when thickest part of chicken is pierced with tip of knife.
6. Do not turn chicken over.

We sometimes treat ourselves to Market Day Chicken Steaks. They are also individually packaged and already cleaned and trimmed, but they cost a fortune so we don’t buy them all the time. Market Day proceeds go to your local school district, so it makes me feel a little better about buying them.
How would I prepare them? Oh, where to start…
Salsa chicken! Place chicken in the bottom of a crock pot. Sprinkle taco seasoning over chicken. Pour salsa over seasoned chicken. Cover and cook on low for 6-8 hours. Finish with a sprinkle of cheddar or pepper jack. Leftovers are good shredded and served on tortillas. Sometimes I’ll use diced tomatoes with chili peppers if I don’t have salsa in the house.
We love BBQ Chicken Potatoes.
I put the chicken breasts in a crock pot with 2 bottles of BBQ sauce a little water. Let cook for 6 hours. Then bake some large potatoes. When those are done, cut open, put in butter, cheese, sour cream, etc. and then add the BBQ shredded chicken to the top. I like to add more BBQ sauce on mine.
My husband and I love these…but we “stole” the recipe from a restaurant in Alabama.

Yeah for convenience and ease. These chix breasts are soooo great!! One of my kids’ favorites is my lean take on Chicken Cordon Bleu: all you do is pound out the breasts a bit and layer with ham, cheese and spinach. Roll up and secure with string. Season to taste and sautee in chicken broth til browned. It’s fast, easy, and fun to make and eat!! Thanks for all you do…Diane

I normally love this chicken, but after watching the news this morning, you might want to check it out! It’s a super fantastic prize, but apparently there has been a recall on Perdue boneless skinless chicken breast. Just thought I would let you know in case you hadn’t see it!
So and Sew Crafty: Did they say why? I’ve been told that this is from a flavoring package being left out of the terriyaki chicken packages and not because anything was wrong with the chicken.

Here’s the info. The flavor packaging got mixed up and they wanted to get them off the shelves in case someone has a milk allergy. They’ll be back up soon. No issues with sanitation or anything like that.
Without a doubt I would use them to make chicken parmesean. It is a household favorite, but we usually save it for when company comes over. With the coupons we would treat ourselves on a weeknight!
1 lb chicken breasts
2 eggs, beaten
3/4 cup Italian breadcrumbs
1 tablespoon oil
1 1/4 cups Ragu tomato sauce
3/4 cup shredded mozzarella cheese
3 teaspoons grated parmesan cheese

Chicken Breasts
Italian
Reduced Carbohydrates
Preheat oven 350°F.
Dip chicken in beaten egg, then coat with breadcrumbs thoroughly.
Heat oil in frying pan. Add coated chicken pieces.
Brown lightly on both sides.
Pour 1/3 of the sauce into an 8-inch square baking dish.
Layer chicken in the dish.
Pour remaining sauce evenly over chicken.
Spread mozzarella cheese over chicken and sauce layer.
Sprinkle with the Parmesan cheese.
Bake for 25 minutes.
Serve with noodles.
I would use them to make Chicken Cordon Bleu!! Yummy!!
I’d make chicken curry
I would probably do a simple sprinkling of Szechuan Pepper blend on them and put them on my George Foreman grill. I had read your review last week and totally forgot to look for them (until after I got home), so I brought home lumpy chicken breasts that don’t like cooking evenly for me at times.
those are fantastic! can’t wait for the drawing! my fav. is chicken pounded thin and patted with butter, flour, salt and pepper. Then you fry it in lemon water and oil, and when finished, top with capers. Yum!
I think I would make ranch chicken with these. It is a family favorite — even my picky 4 year old eats this.
Mix together a package of dry ranch dressing mix with some Parmesan cheese — add some breadcrumbs if you have a lot of chicken. Dip the chicken in melted butter, then roll in the mix and bake. (You can skip the butter, but I like the taste.)
Of course, if I had tons of time I might get really fancy and pound them out and roll them around a great mixture of ricotta cheese, Parmesan cheese, and some cooked spinach. But I probably won’t….

I bought these as a bachelor and threw them on my foreman grill. I got married last August and my wife buys the chicken you need to cut the fat from. When we were at the store, I showed her the perfect portions, but she wasn’t interested. I was excited about your post last week and I bookmarked it so I could convince her to try them out. Well, hubby and I started on WeightWatchers the first of the year, so we would loveto have these! How I would make them though is completely up in the air, but they would be great to make a low fat, low calories chicken parmesean, or to grill up with some seasoning and then slice for a chicken and pasta salad…oh man, my mind is completely running away with ideas.

I would loive this. I always go shopping and buy huge containers of chicken and then come home and break them up into ziplock bags on two pieces and freeze them. These would save me so much time. As far as a recipe I cook chicken in every way and every day. I have a million but my family favorites come from kraft food and family. I make a recipe from their book several nights a week.
Place in baking dish. Pour alfredo sauce over breasts, sprinkle with havarti (in a pinch use swiss or mozzarella) sprinkle with bacon bits. (Real cooked bacon chopped up. You can add green onions to this dish if you like. very yummy!

I love Perdue Perfect Portions. I just discovered them about 2 weeks ago. I bought them because they were on sale and I had a coupon (of course!). Anyway, I ALWAYS forget to defrost meat in the morning for that evening’s dinner and with Perdue Perfect Portions, it can go straight from the freezer to the oven…and no prep involved! Just snip open with scissors and it is ready in about 15-20. If I won, I would pop one in the oven to have on my salad for a healthy lunch.
I’d definitely make some chicken parmesan. One of my fam’s favorites. My little guys finally will eat chicken so this would help momma out!!

I found a recipe called California Chicken recently, and it’s become a favorite of my husband’s and mine. This Purdue chicken would be perfect!
2 skinless, boneless chicken breasts
1/2 teaspoon olive oil
1/4 teaspoon onion powder
1/2 pinch salt
1/2 pinch ground black pepper
1 avocados – peeled, pitted and sliced
1 ripe tomatoes, sliced
1/2 (8 ounce) package Monterey Jack cheese, cut into 10 slices
Preheat oven to 350 degrees F (175 degrees C).
Warm oil in skillet and add chicken and onion. Cook 15 minutes or until chicken is browned and just about done. Add salt and pepper to taste.
Place chicken on cookie sheet and top each breast with 1 to 2 slices of tomato and 2 to 3 slices of cheese. Place in oven for 10 to 15 minutes, until cheese melts. Remove from oven, add 2 to 3 slices of avocado on top of each breast, and serve immediately.
These would be great, I would make whatever I could create with one arm, since my little girl is permanently hooked to the other!

I use perfect portions in kinds of recipes. I usually use it for two meals as one breast can feed my husband and me since my children won’t eat it. I make an easy chicken caesar salad. Bake the chicken breast, let cool and dice. For the salad add the following ingredients into a large salad bowl or large Ziplock bag, toss or shake in bag.
Fresh Express Hearts of Romaine
Shredded Parmesan and Romano cheese
Creamy Caesar Dressing
Garlic Croutons for Caesar Salad
1 cooked chicken breast
Great in a wrap too!
I have not had the pleasure of trying these yet but look forward to doing so!
Since I have a sick 2yr old DD and a sick DH, a nice big pot of chicken noodle soup might be a good recipe for around here!

I would put them in a dish and pour a can of crushed tomatoes over it. Add some crushed garlic and bake for an hour. I love chicken that way.
