Quick and Easy chicken tips

So yesterday, I told you about a fantastic Chicken Amandine recipe .  I also told you I would tell you a few of my favorite chicken tips.  Some will save you money, Some will save you time.

Boil several pounds of chicken at one time and divide it up in to pound bags and then freeze them. (saves $)
Cheat and find the rotisserie chickens from Kroger or Food Lion and get them right before they are thrown out and are discounted.  Usually this is around 8 pm.  (saves time and $)
If you are really cheap, dumpster dive. (saves $)

What a quick and easy chicken recipe

I love cruising around recipes.  Yesterday, I found a great Baked Chicken Amandine recipe.  It was super easy and cheap.  The almonds were probably the most expensive thing.  Check back tomorrow to find a few quick tips on chicken.  BTW, even my 15 month old Little Man asks for seconds.  I just have to make sure he gets no almonds as he still doesn’t have but 2 teeth.

14 oz can of kernel corn, drained
15 oz can of black beans, drained and chopped or mashed

Free Chicken Sandwich at McDonald’s

On May 15, thousands of McDonald’s restaurants will be giving away free Southern Style chicken biscuits and sandwiches. There is a catch though . . . you have to purchase a medium or large drink to get the sandwich.
During the hours of 7 am-10:30 am, McD’s is giving away the chicken biscuits. During the hours of 10:30 am-7 pm, they will giving away the chicken sandwiches. Don’t forget, you need to purchase a drink to get this sandwich for free. The sandwich usually costs about $2.79, so although you have to purchase something it seems to be …read more

Cheesy Chicken Croissants

I was looking through the recipe archives this week and couldn’t believe that I haven’t given you this recipe yet.  I am making this tonight and it is so yummy!  My kids even eat it.
2 rolls of croissants (from the dairy case)
2-3 cups cooked chicken, cut or torn into small size pieces
2 cups shredded cheddar cheese
1 can cream of chicken soup
1/2 can milk
1/2 can water
garlic, salt, pepper (optional)
How you choose to cook the chicken is up to you.  I would recommend boiling it or cooking it in a skillet with a little butter.

Another Winner and Recipes Too!

It’s time for another Perdue chicken giveaway winner.  The second prize goes to Leslie for her easy crockpot salsa chicken.
Place chicken in the bottom of a crock pot. Sprinkle taco seasoning over chicken. Pour salsa over seasoned chicken. Cover and cook on low for 6-8 hours. Finish with a sprinkle of cheddar or pepper jack. Leftovers are good shredded and served on tortillas. Sometimes I’ll use diced tomatoes with chili peppers if I don’t have salsa in the house.
I also enjoy making the easy salsa chicken.  Here’s a variation of the recipe that we enjoy:

Perdue Chicken Giveaway: Winner #1

Ok, so I have tossed around a few ways of how I am going to do the Perdue Chicken Giveaway. Should I just have one winner? Several winners? Announce them all at once? What to do?
I have finally decided to have several winners and to announce them one at a time with their special recipe. It’s kind of like first place per category. So, here goes . . .
The winner for best chicken casserole is Laura from Laura Williams’ Musings.  I’m all for a good chicken casserole, especially one where I can slip in some veggies for the kids without …read more

Recipe Link Love for 1-31-08

Here are some recipes I’ve found while surfing the net.  Some of these would be great for Superbowl Sunday.  Enjoy!
My hunny loves french onion soup.  I found a new recipe that is supposed to taste like Apple Bee’s French Onion Soup.  Hubby will be thrilled.
I’ve made shepherd’s pie before, but never like the Easy Shepherd’s Pie recipe suggestion here.  This one doesn’t have vegetables in it, so maybe my kids would eat it.
I’ve tried this 7 Layer Bean Dip at parties and get togethers.  Now I’m glad to have this simple and yummy recipe for myself.

Perdue Perfect Portions

I hate touching raw meat.  I hate uneven chicken breasts that don’t cook well.  I also hate having to cut off fat and tendons.
Imagine how thrilled I was when I tried Perdue Perfect Portions.  Each fillet is perfectly sized and individually wrapped for fast and even cooking.  I was amazed when I began to open the fillets and saw that they’re of even thickness.  Of course, I was also impressed when I didn’t find any fat or tendons to cut off of the breasts.  It was a girl’s dream come true!
The first time I cooked the breasts I baked them in the …read more
