This Week’s Menu – A Little Help?

I started making this week’s menu and now I’ve come down with a bad cold.  I just don’t feel creative.  Any of you care to help me out with some suggestions?  I have chicken and ground beef to finish out the week.  Thanks!

Sunday – 15 bean soup with kielbasa

Monday – pancakes with homemade syrup and quiche with ham, cheese, and spinach

Tuesday – cubed steak with gravy, mashed potatoes, green beans, biscuits

Wednesday – pigs in a blanket, ?????

Thursday – ???

Friday – ???

    chicken and dumplings. :) Yummy and great for a cold with all that soup. Or you could do chicken with alfredo and noodles.

    hamburger I can think of patties (toss in an egg), meatloaf, casserole or spaghetti.

  2. Do you have potato chips in the house?
    Beat one egg in a bowl, add salt and pepper, dip chicken breasts. Then roll in crushed potato chips. Bake at 350 for 30-45 minutes (I tend to over-bake chicken because I get paranoid about it getting done!).
    You can serve it with canned veggies and stovetop stuffing, or noodles, or white rice … makes an easy menu! Very very easy, and kids love it.

    Eliza: Too bad my husband won’t eat pasta. :P It’s hard sometimes to plan.

    Heidi: I’ve rolled chicken in Ritz crackers before, but I’ve never heard of potato chips. That one sounds interesting.

    Thanks for the suggestions, ladies. Right now I’m actually thinking of doing some kind of Mexican meal for one night. I need to find a good deal on tomatoes so that I can make some homemade salsa (pico-de-gallo). Yummmm!

    If you have rice you could make chicken and yellow rice. Ingredients needed: chicken, rice, onions, garlic, black pepper, green peppers. It’s a one pot meal!!! Hope you feel better

    Hmmm…homemade chicken pot pie? (A personal weakness, but at least you can throw in whatever veggies you have.)

    Now you’ve got me thinking about enchiladas. :)

    Taco Soup – in the crockpot (or soup pot on the stove if need it faster) cans of tomatoes, tomato sauce, corn, kidney beans (or whatever bean you fancy), packet of taco seasoning. Put in browned hamburger and stir. Serve with tortillas, chips, sour cream, shredded cheese.

    Marinate chicken in Teriyaki sauce and serve with brown rice and garlicky buttered green beans.

    Mmmmm. It’s been YEARS since I’ve had my mom’s chicken pot pie (with veggies). She even makes her own crust!

    I forgot all about the taco soup. I may make that. Thanks Julia!

    Tonight I got out my binder of favorites recipes. I think I’m going to make corn casserole with the pigs in a blanket.

    Hamburger: 1) chili with beans (cheap, filling) and cornbread 2) enchiladas (white rice, salsa, black beans, seasoned ground beef, yellow cheese) roll up in a tortilla, place rolled tortillas in baking dish, top with enchilada sauce and cheese, bake for 1/2 hr
    Chicken: if it’s breasts, cook in a non-stick pan with Pam, add frozen microwaved veggies, and mashed potatoes…or if it’s legs or thighs, saute with garlic and onions in a heavy bottomed pot, then simmer for 1/2 hr in spaghetti sauce and serve over risotto (rice), or with gnocchi (if he wont’ eat pasta, he may eat these), or you could just make chicken soup ;)

    White chicken Chili ( my father in law even likes it) McCormick’s makes a spice mix called “White Chicken Chili” it calls for one can of white beans, I use 2 to stretch it and boneless chicken and water. To jazz it up even more you can add some cheese to the top. There is never any leftovers!
