I love doing what I call double duty meals too. My favourite example is a huge roast beef. You can first use it with your traditional fixings for a roast beef dinner and then you can do so much with those leftovers such as: stew, beef pot pie, open faced roast beef sandwiches, etc.
It not only is thrifty but makes weeknight dinners fast and easy without being fast food.
