Almost two years ago, my aunt came to my house and cooked for me after my son was born. She made chicken casserole, hashbrown casserole, and tomato casserole. Umm hmm, yummy!
I’d never had tomato casserole before. I didn’t take me long to see what a great dish it is. This is a perfect time of year to make it, now that the price of tomatoes is dropping. I hope you enjoy this recipe too!
sliced tomatoes
sliced onions
butter or margarine
parmesan cheese
salt and pepper
shredded cheddar cheese
Ritz crackers
Spray 9×13 pan with cooking spray. You will layer your ingredients like a lasagna. Cover the bottom of the sprayed pan with sliced tomatoes. Then sprinkle with salt and pepper. Put 1-2 slices of onion on top of each tomato and then a pat of butter or margarine on each slice. Sprinkle generously with parmesan cheese and then with cheddar cheese. Repeat layers again. Bake until tomatoes are soft (usually 40 minutes) and then top with crushed Ritz crackers. Bake another 5-10 minutes. So yummy!
To cut calories and fat use low-fat margarine, fat free shredded cheese, and lot-fat Ritz crackers.

This sounds awesome.
My hubby really likes this dish. I hope you’ll enjoy it too!
I’ve never heard of this! I’ll have to remember this when I’m buried in tomatoes from the garden!
Thank you for the Make It From Scratch entry!
I will surely make this. Sounds so easy and inexpensive-straight from the garden.
I love tomatoes. I will be making this soon. Thanks.

Ooooh…I could eat tomatoes all day long! Thanks for the excellent idea.
How about the recipe for the Hash Brown Casserole. I have tried several trying to get one that tastes like Cracker Barrell but it hasn’t been as good.
Hey Aunt Lou. I’ll have to see if I can find the hashbrown casserole recipe.
BTW, some farmers were selling tomatoes on the side of the road this week. I got 7 huge roma tomatoes for only $1. Now is the time to try this casserole.
This sounds good to me. My mom makes something similar but with elbow pasta also.
Thanks !
We had this again tonight. It is so good!
