I like fettuccine, but the usual fettuccine recipe is not all that healthy for you. Today I have a healthier fettuccine recipe to share with you courtesy of Tobasco.
This fettuccine recipe is loaded with fresh herbs and vegetables, including the fall flavor of butternut squash. If you’re lucky enough, you might still have some of these ingredients growing in your garden.
I love food with lots of color, and flavor, this recipe definitely delivers (with a little bit of heat added in).
Autumn Harvest Fettuccine
1 small butternut squash, peeled, seeded and cut into 1-inch pieces, about 4 cups
1 leek, sliced

I wanted to use some of the pumpkin I baked the other day to make some pumpkin pie, but I decided to skip the crust. The pumpkin is my favorite part, so I decided to make a crustless pumpkin pie.
It turned out delicious so I thought I’d share the recipe here. We topped the pumpkin pie with some TruWhip, which I’ll be back with a review of in the next day or so.
Crustless Pumpkin Pie
3 cups cooked pumpkin
1 can (12 oz) evaporated milk
1 cup sugar
2 teaspoons cinnamon
1 teaspoon pumpkin pie spice
3 eggs (slightly beaten)
1 teaspoon salt
Mix all the ingredients together …read more
An Easy Fall Fruit Salad

My dad gave me a big bag of apples from his orchard the last time I was over there, so I’ve had plenty of apple dishes going on the last week or so. Today I wanted to make a fall fruit salad, so I combined apples, grapes, walnuts and yogurt. It turned out yummy so I thought I’d share the recipe here. You could probably add a little cinnamon for a little extra spice, but it’s good without.
Fall Fruit Salad
4 medium apples(peeled, cored, and chopped)
1 cup grapes (cut in half)
1/3 cup chopped walnut pieces
1 cup vanilla yogurt
Combine all the ingredients …read more
How To Bake A Pumpkin

The other day I picked up a couple pie pumpkins from a farmer down the road, and a larger pumpkin for my son to paint. Today I finally got around to cooking the pumpkins. You can cook pumpkins several ways, but my favorite way is to bake them.
I usually use the smaller pie pumpkins because they have a better consistency and flavor than larger pumpkins do. I cut the pumpkins in half, and scraped out all the seeds and the pulp. An ice cream scoop, or a large spoon work great for scooping out the pumpkin guts.
Don’t throw out the …read more
Pre-Plan For Holiday Savings

Thinking ahead to the holiday season and the amount of money it takes to get through even the simplest of celebrations can be intimidating. I’ve been brainstorming ways to make it through the holidays and still stay within my budget. I’ve come up with a few ideas that I’m hoping will be helpful to you, as well.
*Clean out your freezer. If you are like me, your freezer is full of useless items like bags of icy bread slices, unfinished bags of chicken nuggets, raviolis, etc. Take a look at the items and if you can use them, do so, but if …read more
Halloween Fun For Singles

Halloween is my favorite holiday, which makes perfect sense as I love both dressing up and chocolate equally. It’s also the perfect opportunity to put on something fun, sexy, or scary (your pick!) and hit the town. Buffy Summers explained it best when she told Willow that Halloween was “come as you aren’t day.” It’s the one day year when you are expected to get a bit wild. (Just a bit).
I did some research and here are some Halloween events for singles around the U.S. I hope you find something fun near you.

National Popcorn Poppin’ Month

October is National Popcorn Poppin’ Month. Around my house, it’s popcorn popping month pretty much all year long. My daughter and I eat a lot of the stuff and our brand of choice is Orville Redenbacher because it makes the fluffiest corn.
My favorite way to eat popcorn is with a combination of popcorn salt (it’s a smaller granule than traditional, so it sticks better) and brewers yeast. I spray the popped corn with cooking spray and that helps the salt and brewers yeast to stick.
Another of my specialities is caramel corn, but I only make it a few times a year. It’s so …read more
Fall Foods Are Full of Vitamin A

Fall is a great time to get your vitamin A. Many fall foods and flavors are loaded with vitamin A, so it’s a great time to make sure you’re including plenty of this powerful vitamin in your diet. Vitamin A is also known as beta carotene, and is great for your eyes, your skin and it’s loaded with antioxidant properties to neutralize free radicals in your body. Neutralizing free radicals can help prevent tissue and cellular damage, and keep you healthy.
Some of my favorite fall foods that are loaded with vitamin A include:
Pumpkin is one of falls favorite flavors, and …read more
Thanksgiving: How About A Brine?
October 11, 2009 by Michelle Smith

I got the November 2009 issue of Food & Wine in the mail yesterday. It boasts “70 Classic and creative Thanksgiving Recipes…” Yep, turkey time is not that far away.
Last year I brined a turkey. I kept hearing about the process on the The Food Network (Yes, I know I always mention The Food Network. Yes, I do watch it that much. It’s like my kids and Spongebob). The brine is supposed to yield a moister bird. It’s a scientific process wherein the salt causes the muscle cells of the turkey to absorb water through osmosis. This hydrates the bird …read more
